I need to wire this ( a switch and temperature controller from a slow cooker ) to a 240v fan from an old microwave... however I don't no how to do it safely with it being AC power I'm not goin to experiment like I do with DC... so do I wire this in between the live wire on my fan to use it as a switch an controller (as was the job in the slow cooker) or another way... thanks for your help

It would be better if you told us what you want to do......What is the objective? A switch to control what. I might be slow but it isn't obvious
Why do you want to use the fan?
Do you want the fan speed proportional to the temperature?
Do you want the fan to turn on/off automatically with the cooker?
