I've been seeing these metal things in the adjustable shelving of local bookstores recently. They consist of long strips of metal with holes in them. A router was used on the wooden sides of the shelf to make grooves to insert the metal strip in, and then pegs are inserted into the hole/slots and put a board over this to make a shelf level.
So anyway, anyone know what it's called, and where to buy/how much?

I don't know what you call that, but if I correctly visualize what you mean, that thing is available at Ace Hardware and I think Wilcon has it also. I installed one at home before.
